One of the healthiest foods you should definitely include in your daily choices is quinoa, which in recent years has made a strong entrance into the nutritional spotlight thanks to its many beneficial properties.

Quinoa is rich in Omega-3 fatty acids, which are beneficial for proper heart function and fat loss.

It is a source of phosphorus, magnesium, and iron.

It is gluten-free, light on your digestive system, and one of the foods that activate your metabolism.

Ingredients for 3 servings

  1. 1 1/2 cups water
  2. 3/4 cup quinoa
  3. 1 lemon (juice and zest)
  4. 2 fresh spring onions, finely chopped
  5. 1 tablespoon extra virgin olive oil
  6. 1/2 cup cucumber, sliced (seedless)
  7. 2 tomatoes, finely chopped
  8. 1 yellow pepper, finely chopped
  9. Salt
  10. Organic black pepper

Preparation

  1. Rinse the quinoa in a fine sieve under running water for 1-2 minutes.
  2. Pour water halfway up a small saucepan and bring to a boil. Once boiling, add the quinoa and reduce the heat.
  3. Simmer for about 15 minutes with the lid closed. Do not stir the quinoa while it’s cooking.
  4. When finished (the water should be absorbed and the quinoa puffed up), remove from heat and let sit for 5 minutes.
  5. In a large bowl, mix the lemon juice, zest, chopped spring onions, olive oil, salt, and pepper.
  6. Fluff the quinoa with a fork once and add it to the lemon mixture.
  7. Add the tomato, pepper, and sliced cucumber, then mix well. Serve the salad warm.
