PEA PROTEIN SMOOTHIE
High- Protein smoothie, filling and highly nutritious!
A special cake that is very easy and healthy. It’s perfect for breakfast because it’s not too sweet.
It contains no eggs or butter but uses olive oil, which keeps it soft, and it’s rich in dietary fiber thanks to the use of whole wheat flour and the excellent, beneficial carob flour. We enhance its nutritional value with fresh orange juice and chopped walnuts.
We sweeten it to taste with brown sugar, which gives it a dark color and an exceptional flavor, and we flavor it with orange zest or ground cloves. Both aromas complement it beautifully.
This is a great recipe to try carob flour, and no one will realize you didn’t use cocoa!
Ingredients:
1 cup all-purpose flour
2 cups whole wheat flour
½ cup sifted carob flour
½ cup high-quality olive oil
1 cup orange juice
1½ cups milk
1 teaspoon orange zest or ½ teaspoon ground cloves
1 teaspoon baking soda
½ cup soft brown sugar
1 cup chopped walnuts
Instructions:
In a bowl, combine the olive oil, orange juice, sugar, and 1 cup of milk. Beat with a hand mixer for 5 minutes or whisk vigorously by hand.
Add the baking soda and mix well.
Gradually add the two flours (not the carob flour), stirring continuously, until the batter is thick like a typical cake batter. If the whole wheat flour has a lot of bran and the batter becomes too stiff, add a little milk from the remaining ½ cup.
In the remaining milk, dissolve the carob flour until it resembles melted chocolate.
Divide the batter into two parts. To one part, add the chopped walnuts and either the cloves or orange zest.
To the other part, add the dissolved carob flour mixture and mix well to combine evenly.
Spoon the two mixtures alternately into a lightly greased and floured pan (or a silicone mold) according to its shape.
Bake the cake in a preheated oven at 180°C (356°F) for 1 hour. To check if it’s done, insert a knife blade into the cake, if it comes out clean, it’s ready.
After one hour, turn off the oven and leave the cake inside for 10 minutes.
Remove the cake from the oven, unmold it, and let it cool on a wire rack.
If desired, dust with powdered sugar or drizzle with melted chocolate before serving.
